「Soy pudding city」
Soy pudding city: move the layer sitting atop the bowl to reveal a soy pudding, filled with ingredients such as sweet potato, mung beans, and shiratama mochi.
We envision a city as a dessert, where a host of ingredients are brought together to coexist within their dish to complete a landscape.
Kuromoji oil is used as an accent for the dish, and a moringa tea is offered as the accompanying drink, to incorporate the essence of plants and trees.
